Helloooooo Tuesday! Originally, I planned on the usual ‘Taco Tuesday’, but I had a craving for some roasted chicken and veggies. I also have had a sweet tooth lately, and I tried a recipe on my own today. On the Tone It Up program, there is a recipe for coconut macaroons, but since I lacked protein powder and coconut flakes, I improvised. Here’s what I did to keep tonight’s post-dinner moments extra yummy.
1/2 cup coconut flour
1tsp vanilla extract
2 bananas, mashed
2 Tbsp semi-sweet mini chocolate chips
Combine ingredients in a bowl until evenly distributed. Scoop about 2 tablespoons and form into a cookie. Place on a greased baking sheet. Bake at 350 degrees for about 14 minutes. Let cool. Then, enjoy! 😋🍪
